Quinoa Fried Rice (藜麦炒饭)

Healthy substitute for fried rice with a lot of veggies.
(好吃不胖的蛋炒“饭”)

I absolutely love fried rice, but since I'm trying to lose some weight I've found that fried quinoa is a perfect substitute! I used a lot of veggies and less quinoa so you still feel full but avoid eating too much carbs.
我其实真的很喜欢吃炒饭的,但是呢又因为最近在减肥所以尽量吃得健康一点,所以这一个炒藜麦饭真的是个很不错的替代品!我减少了藜麦饭的量,然后加了很多蔬菜,所以不仅可以填饱肚子还可以避免摄入过多的碳水。
-----Ingredients:
1 cup quinoa
2 medium carrots
2 cup green beans
6 oz(2/3 of a can) corns
2 cup chinese chives (optional)
2 large eggs (whisked)
2 Tbs olive oil
1/4 tsp salt
1/2 tsp freshly ground black pepper
2 Tbs soy sauce
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cumin powder

1 杯 藜麦
2 根 胡萝卜
2 杯 豆角
56 克 (2/3 罐) 甜玉米
2 杯 韭菜(可不放)
2 个 鸡蛋(打散)
2 汤匙 橄榄油
1/4 茶匙 盐
1/2 茶匙 黑胡椒
2 汤匙 生抽
1/4 茶匙 蒜粉
1/4 茶匙 洋葱粉
1/4 茶匙 孜然粉
-----Instructions:
Cook the quinoa according to the instructions on the package.
While waiting for the quinoa, clean and cut the green beans and carrots into small cubes. Also chop the chinese chives finely. Then put them aside.
Heat half of the olive oil in a non-stick pan over medium heat and put carrots and green beans in. Stir fried them for around 4 minutes and then add Chinese chives and salt and half of the pepper in and stir all of them together for another 4 minutes and put them aside.
Heat the rest of the olive oil in the non-stick pan and add the cooked quinoa, then add the eggs over the quinoa and stir fry them together quickly so that the egg can evenly cover the quinoa.
Add all the vegetables in the pan and mix them with the quinoa.
Add all the seasoning ingredients in the pan and mix them with the fried quinoa. (Before serving, you should try it to see if it is salty enough for you since some people might prefer more salty than others)

先按照包装上的指示把藜麦饭煮熟
等待藜麦煮熟的过程可以准备蔬菜。先把胡萝卜,豆角和韭菜都洗干净,然后切成小颗粒状。放在一旁备用
在一个不粘锅内倒入一半的橄榄油,中高火加热,然后先加入胡萝卜和豆角炒大概4分钟,然后再加入韭菜和盐一起炒匀,盛起放在一旁备用
把剩下的另一半橄榄油放入锅内加热,放入煮熟的藜麦饭,然后加入打散的鸡蛋快速炒匀,尽量让藜麦饭都均匀沾到蛋液
把所有蔬菜都倒入锅中和饭一起炒均匀
把所有调味料逐一加入并拌炒均匀(上碟之前可以先试试够不够咸,因为有些人可能会比较喜欢重口味一点)
大功告成!
