Chinese Steamed Pork Ribs(蒸排骨)

Simple delicious Chinese steamed pork ribs that you do not have to go to a dim sum place for, but can make at home by yourself! (简简单单的蒸排骨,不用去喝茶自己也能在家做起来!)



These steamed pork ribs are my dad’s favorite dish, so my mum always used to make it at home. I actually wasn't crazy about it for a while, probably because I had it all the time. However after moving to Seattle, I, who do not fancy pork that much, surprisingly miss this dish A LOT! So I asked my mum about the recipe and I copied it!

蒸排骨是我爸爸最喜欢的菜,所以我妈妈经常都会在家做给爸爸吃,可能以前总是能吃到所以其实觉得有点腻。但是搬来西雅图之后,很惊讶的,不怎么喜欢猪肉的我居然很想念这道菜!所以马上问妈妈做法,把它学起来!


-----Ingredients:


1               Tbs               vegetable oil

1/2            tsp                white sugar 

1/2 Tbs salt

1/2            tsp                white sugar

1               Tbs               garlic(minced)

2               Tbs               starch

300          g(~1/2 lbs)     pork ribs

                Some              soy sauce


-----材料:

1               汤匙                植物油

1               茶匙                盐

1/2           茶匙                 白砂糖

1               汤匙               蒜蓉

4               汤匙               生粉(土豆淀粉)

300           克(约半斤)       排骨

适量 生抽(蒸鱼豉油)


-----Instructions:

  1. After defrosting the ribs, cut them into 3-5 cm long and put them into a big bowl. Put them under cold slowly running water for around 15 minutes or for saving water you can cover them with cold water and change the water every 5 minutes (Make sure the water is clear in the end or wash them for longer time so that it will not be smelly or too meaty when you eat them).

  2. Dump the water and use kitchen towel to dry the ribs. And add half of the starch into the bowl with ribs in. Use your hand to ‘massage’ the ribs so that every ribs is slightly covered by the starch.

  3. Add salt, sugar and oil, continue ‘massaging’ the ribs to make sure they are all marinated with seasoning.

  4. Add the remaining starch and repeat step 2 so that the ribs are evenly covered by the seasoning and will be flavorful.

  5. Sprinkle the minced garlic on the ribs and put them into the fridge to marinate for around 20 minutes (You can put them into a ziploc for saving some room ).

  6. After the ribs marinate, add some water into a big pot, wok or use a steamer and boil the water. Then put the ribs on a flat plate and put it into the pot, wok or steamer to steam for 12-15 minutes (but no more than 15 minutes or the meat will be a bit over cooked. Unless you put more ribs than the recipe says, then you can steam them for longer time and also flip the ribs around when half way done ).

  7. Add some soy sauce and they're good to go! (If you prefer more salty you should put more soy sauce on.)

** About steaming, if you do not have a a steamer or a steamer rack, then just put a tall and heat-resistant bowl in the pot or wok that is big and tall enough for you to put the plate of ribs on the bowl and also covered by the lid.


-----步骤:

  1. 排骨解冻后,切成3-5厘米左右长的排骨段,放在一个大盆中用流水漂洗15分钟,或者用冷水泡洗,每5分钟换一次水。(一定要洗至水色变清,这样整出来的排骨没有腥味)

  2. 腌制,把排骨沥干水,用厨房纸擦干,然后撒上一半的生粉用手抓匀,尽量让每一块排骨都沾上薄薄一层生粉。

  3. 加入盐,糖和油,继续抓匀

  4. 再放入另一半生粉重复第二步,让调味料裹入排骨内。

  5. 撒上蒜蓉,把排骨放入冰箱腌制20分钟左右(若冰箱位置不够可以把排骨放进保鲜袋内)

  6. 排骨腌制好之后,先在锅内放水烧开,然后把排骨放到较平坦的碟子上再放进锅内蒸约12-15分钟(不要超过15分钟不然排骨会变老,但如果排骨的量比较多中途可以翻一下排骨然后适量蒸久一点)

  7. 撒上一点点生抽,大功告成啦!(喜欢咸一点的可以加多一点酱油,我比较喜欢有点甜味的蒸鱼豉油!)

** 关于蒸,如果家里没有蒸笼或者架子,可以用一个高一点的耐热的碗放在足够大和高的锅里面,然后把碟子放在碗上面上面,盖上锅盖蒸。
