Tofu and Chicken Meatballs With Veggies(豆腐鸡肉丸子和豆芽菠菜凉拌)

The meatballs are made by tofu and chicken so they taste a bit less meaty. And this simple spinach and bean sprout salad also makes the meatballs less heavy! This dish is perfect for summer!

这个丸子是由豆腐和鸡胸肉混合而成的,所以吃起来没有那么腻,再加上简简单单的豆芽菠菜凉拌,最适合夏天没有胃口的时候吃了!(肉丸的菜谱是从One Cook Book这个博客学来的)

-----Ingredients(材料):
Meatballs(肉丸):
14 oz (400 g) ground chicken 400 克 鸡绞肉
5 oz (142 g) firm tofu 142 克 老豆腐
1½ sweet bell peppers 1½ 个 彩椒
1/2 cup green onion, finely chopped 1 根 葱(切碎)
1 inch ginger, minced 1 指头 姜(剁成蓉)
1 large egg 1 个 鸡蛋
Salt 适量 盐
Freshly ground black pepper 适量 黑胡椒
vegetable oil 适量 植物油
Teriyaki Sauce(照烧汁):
2 Tbsp soy sauce 2 汤匙 生抽
2 Tbsp granulated sugar 2 汤匙 白砂糖
2 Tbsp mirin 2 汤匙 味霖
4 tsp rice vinegar 4 茶匙 白米醋
1 tsp corn starch 1 茶匙 土豆淀粉
Salad(凉拌):
10 oz Spinach 280 克 菠菜
10 oz Bean sprout 280 克 嫩豆芽
2 cloves garlic, minced 2 瓣 蒜
1 Tbsp sesame oil 1 汤匙 芝麻油
1 Tbsp soy sauce 1 汤匙 生抽
1/2 tsp salt 1/2 茶匙 盐
-----Instructions(步骤) :
For the sauce (照烧汁)
In a small bowl, use a fork to mix the ingredients together and set aside.
把照烧汁的所有材料倒入一个小碗中,用叉子将他们搅匀,放在一旁待用。
For the meatballs(肉丸)
Wrap the tofu with paper towels and let it drain for 15 minutes (I changed the paper towel twice). 用厨房纸将老豆腐包起来把豆腐多余的水吸除,中途更换两次纸。
Remove sweet bell pepper seeds and dry them with a paper towel. Then dice them into small cubes. 将彩椒内的籽去除并洗干净,用厨房纸吸干后将它们切成丁
In a large bowl, mix ground chicken, sweet bell peppers, and green onion together. 将鸡绞肉,彩椒丁和碎葱放入一个大盆中搅匀
Break the drained tofu into small pieces by hands and add into the meat mixture. 用手将豆腐捏碎成小块然后加入上述大盆里面
Add the egg and combine it with the meat mixture gently. 在大盆中加入鸡蛋并搅匀
Add the ginger, salt, and black pepper and mix them all together. 在大盆中加入姜蓉,盐,和黑胡椒,并与其他材料搅匀在一起
Using two tablespoons or hands, shape the mixture into small balls (about 2 inches each). 用两个汤匙或者手,将肉泥捏成每个大概直径5厘米的球状
Heat the oil in a non-stick frying pan over medium heat and drop the meatballs, keeping some distance between each ball. 在不粘锅内加入少量植物油,待油加热之后加入肉丸,注意肉丸间保持一点距离
When the bottom is nicely browned, flip them over and cover with the lid to cook until inside is no longer pink (about 3 minutes). Reduce the heat to medium low heat if browning too fast. (You might need to repeat this a few times if your pan is small) 待肉丸底部煎至一点金黄色,用铲子和筷子一起将他们翻过来煎另一面,并盖上锅盖焖大概3分钟。如果感觉焦得太快将火开小一点。(如果锅不够大可以将肉丸分成几批煎)
When all the meatballs are cooked, put them all back into the pan with low heat, and pour the Teriyaki sauce we made earlier over the meatballs. Flip the meatballs so that both sides of them will be coated with the yummy sauce! (Again, if your pan is not big enough, just divide the meatballs and the sauce into half and repeat this step twice) 当所有肉丸都煎熟之后,把他们都放进锅里面,开小火,倒入一开始做的照烧汁,轻轻地用铲子翻炒肉丸,让每一颗肉丸都沾上汁。(同样的,如果锅不够大,可以将肉丸和汁分批,分几次完成这个步骤)
For the salad(凉拌)
In a pot, add enough water to cover the bean sprouts and bring it to boil. 在一个锅内放入一定量(可没过豆芽)水
Once boiling, add bean sprouts to cook for 1.5 minutes. 水沸腾后放入豆芽煮一分半钟
Put the colander under cold running water, add the cooked bean sprouts into the colander so that the cooking process will be stopped before they get over cooked. After it's cooled down, set aside, drain until there is no more water (You can also use your hands to squeeze the extra water out of the bean sprouts). 将煮好的豆芽倒进滤水盆中,并用冷水冲洗降温,以防豆芽被煮的太老,然后注意把水滤干(可以用手轻轻拧出多余水分)
Repeat steps 1, 2 and 3 to cook the spinach. 用处理豆芽的方法来处理菠菜
In a large bowl, combine the rest of the ingredients together. 将除了豆芽和菠菜以外的材料都放入一个大盆内并搅匀
Add the bean spout and spinach into the bowl. 将豆芽和菠菜加入大盆内
Toss all together and serve with the delicious meatballs! 将所有材料搅匀,然后就可以和肉丸一起享用啦!
