Guangdong Rib Soup(广式排骨汤)

This is a really traditional soup from southern China (Guangdong province). It is easy to make and contains a lot of nutrition which is really good for your body!
这汤是非常传统的广式汤之一。做法简单而且又非常有营养,喝了对身体非常好呢!

I am from Shenzhen, in the Guangdong province of Southern China. In Guangdong, we focus so much on how to live healthy, and soup is one of the dishes that we make at least once a week. Because in the soup, there are so many different ingredients that would be helpful to refill a variety of nutrition that our bodies need. This is one of the most traditional ones and my favorite. I hope you will enjoy it too!

-----Ingredients:
1 big sweet corn
2 small carrot
2 slice ginger
1 pound(~1kg) pork ribs
1/2 pound(~500g) Chinese yam
5 big dry red date
5 gram goji berries
1 Tbs salt

1 根 甜玉米
2 根 胡萝卜
2 片 姜
1 磅(约1千克) 排骨
1/2 磅(约500克) 淮山
5 颗 干红枣
5 克 枸杞
1 汤匙 盐
-----Instructions:
Clean the ribs: In a big pot, fill it with cold water and then put ribs in it. Boil the ribs on high, when it starts boiling, use a spoon to skim off the scum quickly until there is nearly no more. Then turn off the stove and use a slotted spoon to move the ribs to a plate.
Cut the carrot, yam and corn into medium size chunks (1-2 inches).
Use a kettle or a pot to boil around 2 liters of water or more.
Slightly clean the pot that used to clean the ribs and put all the ingredients(except salt) in the pot, then pour the boiled water in the pot. The water should cover all the ingredients with another 3-5 cm of water above the ingredients.
Turn on the stove to medium high and boil the soup for an hour, then turn it down to medium low for another 1.5 hours(If you find that there is not enough water, only add in boiled water, not cold water or it will not turn out as good).
Add the salt 10 minutes before you turn off the stove and try some to see if you need it to be more salty.

-----步骤:
焯水:在一个大锅内放入冷水然后放入排骨,开大火,稍微煮开时用汤勺捞起浮沫,快速重复直至水表面基本没有浮沫,关火。将排骨捞起,放在一旁待用。
将胡萝卜,玉米,淮山切成1-2英寸大小的块状,放一旁待用。
用热水壶或者另一个锅烧2升水。
将刚用的锅内的水倒掉用清水稍微冲洗干净,然后把所有材料(除了盐)加入锅内,然后把煮开的水倒入锅内,水量是要没过食材并高出2-3厘米。
开中高火熬约1小时,然后转中小火煮多1个半小时(若中途发现水量不够,或快煮干了,只能加入开水不能加冷水)。
最后关火前十分钟加入盐,可以试试味,如果不够咸可以加多一点点盐。
