Sriracha Meatballs With Soba Noodles Salad(肉丸荞麦面沙拉)

Yummy pork meatballs easily cooked in a slow cooker and served with healthy soba noodles salad covered by the delicious Sriracha based sauce. It is a good choice for summer meal prep! 这款肉丸可用慢煮锅简单完成,然后和健康的荞麦面沙拉一起享用。非常适合需要提前备餐又想吃得健康的吃货们哦!


My husband and I have been doing meal prep every Monday for the last few months, and it's been fantastic. Meal prepping is a great idea if you want to save some money and time. We used to eat out or order delivery all the time, but that costs a lot of money and is not great if you're trying to get in shape. I learned this recipe from Foodiecrush (https://www.foodiecrush.com/) and made some adjustments according to our flavors. Hope you will like it too!!

-----Ingredients :

For the meatballs

  • 1 pound (~450 grams) ground pork

  • 1 egg yolk, whisked

  • ¼ cup soy sauce

  • 1 Tbs ginger, grated or finely minced (about 1-inch knob)

  • 2 cloves garlic, finely minced

  • 1 tsp freshly ground black pepper

  • ¼ cup chopped green onion, about 3 green onions

  • ½ cup panko bread crumbs

  • ¾ cup Sriracha

  • ¼ cup regular ketchup

  • 1 10-ounce jar pepper jelly

  • ½ cup soy sauce

  • ¼ cup brown sugar

  • 1 tsp sesame oil

  • Green onion and sesame seeds for garnish

For the Salad

  • 1 9-ounce package soba noodles

  • 2 carrots, peeled and sliced thinly into matchsticks

  • 1 cucumber, peeled, seeded and sliced thinly into matchsticks

  • 1 red bell pepper, seeded and thinly sliced into matchsticks

  • 1/2 head cabbage, thinly sliced

  • Fresh basil

For the Dressing

  • 1/4 cup leftover sauce from the meatballs

  • 1/4 cup rice vinegar

  • 1 tsp sugar or to taste

  • ½ tsp sesame oil

  • 450 克 猪绞肉

  • 1 个 鸡蛋黄(打散)

  • 1/4 杯 生抽

  • 1 汤匙 姜蓉

  • 1 茶匙 黑胡椒

  • 3 根 葱(切碎)

  • 1/2 杯 面包糠

  • 3/4 杯 红公鸡牌辣椒酱

  • 1/4 杯 番茄酱

  • 1 罐(约280克) 甜椒果酱

  • 1/2 杯 生抽

  • 1/4 杯 黄砂糖

  • 1 茶匙 芝麻油

  • 适量 碎葱花和白芝麻

荞麦面沙拉

  • 1 包(约280克) 荞麦面

  • 2 根 胡萝卜(去皮并切成细条)

  • 1 根 黄瓜(去皮并切成细条)

  • 1 个 彩椒(去皮并切成细条)

  • 1/2 头 包生菜(切成细丝)

  • 适量 生罗勒叶

凉拌

  • 1/4 杯 焖肉丸剩下的汁

  • 1/4 杯 白米醋

  • 1 茶匙 白砂糖

  • ½ 茶匙 芝麻油




-----Instructions:

Make the meatballs:

  1. In a medium bowl, gently mix the pork , the egg yolk, soy sauce, ginger, garlic and ground pepper together with your hands or chopsticks.

  2. Add the green onion and panko bread crumbs into the bowl and mix gently until incorporated. Refrigerate for 30 minutes.

Ready to cook:

  1. Line a baking sheet with aluminum foil (or spray or brush some vegetable oil on the baking sheet), and preheat the oven to 400 degrees F (205 ℃).

  2. Use a small scoop or spoon to form ½-inch balls and gently roll between your palms and place on the baking sheet. Bake for 10 minutes or until golden brown. (The meatballs do not need to be cooked all the way through because we're going to put them into the slow cooker.)

  3. Transfer to a slow cooker.

For the sauce

  1. In a medium size bowl, mix Sriracha with regular ketchup, pepper jelly, soy sauce, brown sugar and sesame oil. Pour over the meatballs and cook on high for 2-3 hours or low for 4-6 hours.

  2. Done! If you like, you can sprinkle some chopped green onion and sesame seeds before serving (recommended).

For the Dressing:

  1. In a small bowl, mix all the ingredients for dressing together.

  2. If you don't have enough leftover meatball sauce to make the dressing, prepare a simple dressing by mixing 1/4 cup ponzu sauce with 1/4 cup rice vinegar, 1 teaspoon sugar (or to taste) 1/2 teaspoon dark sesame oil and the juice of 1 lime.

For the Salad

  1. Prepare the soba noodles according to the package directions.

  2. Assemble the salad by dividing the noodles into four bowls and adding equal amounts of the carrot, cucumber, bell pepper and cabbage. Top with warmed meatballs and serve with basil. Drizzle with dressing and serve.

准备肉泥:

  1. 将猪绞肉,蛋黄,第一份生抽,姜蓉,蒜蓉和黑胡椒加到一个大碗中,用手或者筷子将他们搅匀

  2. 将切碎的葱和面包糠倒入肉泥中并搅匀,然后放入冰箱内腌制30分钟

准备肉丸子:

  1. 在烤盘上铺上一张锡纸或者喷上一层植物油,烤箱预热至205摄氏度

  2. 用一个小的雪糕勺或者汤匙挖出一个直径大概1/2 英寸的肉球,并用你的手掌将球搓圆,放在烤盘上面。然后放进烤箱烤10分钟或者烤至稍稍金黄色即可。

  3. 将烤过的肉丸子放入慢煮锅内

焖肉丸子:

  1. 将辣椒酱,番茄酱,甜椒果酱,第二份生抽,黄砂糖和芝麻油放入一个小碗中混合均匀,然后将它们均匀撒在慢煮锅内的肉丸子上面。将慢煮锅调至大火煮2至3个小时,或者转至小火煮4至6个小时

  2. 肉丸大功告成啦!吃之前可以在丸子上面撒上葱花和白芝麻哦!

酱和荞麦面沙拉:

  1. 将酱的材料全部放入一个小碗内混匀(如果焖肉丸剩下的汁不够,可以将 1/4 杯 柑橘酱油, 1/4 杯白米醋, 1茶匙白砂糖, 1/2 茶匙芝麻油 和一个青柠的汁搅匀做成汁加入酱内 )

  2. 根据荞麦面包装上的指示将荞麦面煮熟

  3. 把荞麦面分装到四个碟子,然后按照自己的喜好摆上切好的蔬菜条和肉丸子,淋上刚做好的酱,慢慢享用哦!
