Stir-fried Shrimp with Roasted Potatoes and Asparagus ( 快炒虾仁伴烤土豆粒和芦笋)

This is an easy, delicious and healthy dish. It is perfect if you want something yummy but also are trying to lose some weight!

This is one of my favorite dishes for meal prep! Because it is so easy to make and still delicious after reheating. If you are meal prepping, I would recommend keeping the potatoes separate from the rest of the food in the lunch boxes, as doing so can prevent the dry potatoes from absorbing too much liquid from the shrimp or asparagus and becoming soggy. I hope you will love it as much as I do!

这是我最喜欢用来提前备餐的一道菜!因为这道菜真的太容易做了,而且再次加热之后也还是很好吃!我会建议在你将食材全部放到你当天的餐盒之前,把烤土豆和其他食材分开放。因为这样就可以以防烤干了的土豆吸收虾仁或者芦笋的汁水又变软了。希望你也会和我一样爱上这道菜!

-----Ingredients:

Roast Potato and Asparagus:

2     pound (~1kg) yellow potatoes

1                bunch              asparagus

2   Tbsp olive oil

2 1/2 Tbsp    salt

4   tsp        freshly ground pepper

4     tsp   garlic powder

4    tsp    onion powder

2   tsp thyme leaves

2                 tsp                chili powder

Stir fried Shrimp:

1      pound (~0.5kg) large frozen peeled shrimp

3                 cloves               garlic (minced)

1    tsp    olive oil

2     Tbsp      soy sauce

2   tsp         freshly ground pepper

2    tsp      onion powder

2  tsp   thyme leaves

                  Dash                 salt

2 磅 (约1千克) 土豆(不是小土豆)

1                 捆 芦笋

2 汤匙 橄榄油

2 1/2 汤匙 盐

4 茶匙 黑胡椒粉

4 茶匙 蒜粉

4 茶匙 洋葱粉

2 茶匙 碎百里香

2                 茶匙 辣椒粉

小炒虾仁:

1 磅 (约500克)    大的去壳冰冻虾

3                 瓣 蒜蓉

1 茶匙 橄榄油

2    汤匙 生抽

2 茶匙 黑胡椒粉

2 茶匙 洋葱粉

2 茶匙 碎百里香

适量 盐


-----Instructions:

For the roast potato and asparagus:

  1. Preheat oven to 425 degrees Fahrenheit (around 210 Celsius)

  2. Dice potatoes into roughly 1 inch cubes, then put them into a big bowl and soak them in cold water for around 15 minutes (so that we can wash away the extra starch and make it become crunchier in the end).

  3. Cut off the end of asparagus and then wash the asparagus. Set aside.

  4. Dump the water for soaking the potatoes, rinse the potatoes under running cold water and dry the potatoes with paper towels.

  5. In a dry big bowl, put the dry potato cubes inside, then add half of the olive oil and half of all the seasonings. Use your hands or a spatula to toss them all together until coated evenly.

  6. In another big bowl, put the asparagus in and repeat the tossing step for potatoes

  7. Move the potatoes and asparagus to 2 separate baking sheets and put them into oven.

  8. Bake the asparagus for 12-15 minutes depending on thickness and check if they are done every minute after baking for 12 minutes in case they are either under cooked or overcooked.

  9. Bake the potatoes for 35 to 45 minutes. Every 15 minutes, flip the potato cubes so that they are all heated evenly. Check the potatoes every 5 minutes after baking for 35 minutes to see if they are crunchy enough for you. If not then bake them for longer time until you think they are crunchy enough.

  10. After baking, let them cool down a bit before serving them or putting them into a meal box.

For stir fried shrimp:

  1. Place the frozen shrimp in a colander and run cold water over them to thaw them before cooking. Then dry them with a paper towel.

  2. In a non-stick pan, heat up the olive oil for 1 minute on medium-high and then add minced garlic and stir fry for another one minute.

  3. Add the shrimp in the pan and stir fry for around 3-6 minutes depending on the size of the shrimp, or until the shrimp turns pink.

  4. Quickly add all the seasonings to the pan except the salt, stir fry the shrimp for another minute.

  5. Transfer the shrimp to a plate immediately to avoid overcooking. Serve them with the potatoes and asparagus. Add some salt if you prefer them more salty.

  5. 把土豆在一个大的,干的盆里,然后把一般的橄榄油和一般的其它调味料都放到盆里。用手或者两个叉子将土豆和调味料搅匀在一起。

  6. 把芦笋放在另一个盆子里,重复上面的步骤加入调味料。

  7. 把土豆和芦笋分别移到两个烤盘然后放进烤箱。

  8. 芦笋要烤12-15分钟,要看芦笋有多粗。烤到12分钟之后,每隔一分钟看一下芦笋熟了没有以防太生或者烤太久太软了。

  9. 土豆要烤35到45分钟,并且每15分钟要将土豆翻炒一下让他们都受热均匀。烤到35分钟之后,每5分钟检查一下看看够不够酥脆,不够的话再烤久一点知道你觉得够脆了。

  10. 烤完后,把他们都放在一边凉一凉再上碟或者放到餐盒里面。

快炒虾仁:

  1. 把冰冻的虾放在放在一个盆子里,然后用冷水冲洗解冻。之后用厨房纸吸干虾上面的水分。

  2. 把橄榄油倒入不粘平底锅里,开中高火热油1分钟,然后加入蒜蓉翻炒1分钟。

  3. 把虾仁加入锅内翻炒3-6分钟,这决定于虾仁大小,或者炒到虾仁开始变粉红色。

  4. 把所有的调味料快速加入然后翻炒1分钟。

  5. 最后把虾快速移到碟子上以防煮老了。然后配上烤土豆和芦笋一起吃。如果觉得不够咸的可以最后撒点盐。开吃吧!
